Hyogo Prefecture is one of the leading soba (buckwheat noodle) producing areas in western Japan, famous for its “Izushi Sara Soba.
This soba is made from Hyogo-grown buckwheat, ground on a traditional millstone, and carefully prepared.


[ How to boil well ]
[1] Bring plenty of water to a boil in a large pot. (Approximately 1 liter per 100 grams of buckwheat is a good rule of thumb.)
[2] Add soba noodles and boil for 4 1/2 minutes. If the water seems to spill over during boiling, reduce the heat.
[3] After boiling, quickly remove from the water to a colander, rinse well in cold water, and cool thoroughly before draining.
